All of Pedroni's excellent balsamics undergo the same time-honored production techniques, but the Aceto Balsamico di Modena stops short of the 12-year age requirement for a Balsamico Tradizionale. But even this acetaia's young vinegars feature a blend of different ages of barrel-aged balsamic vinegars, giving Pedroni's vinegars great depth and sweetness. What is unique about Italo Pedroni's balsamic-making style is that he boils the grape must down to less than half of its original volume to concentrate the flavors of the grape, resulting in a sweeter and more intense balsamic than is typically available in this price range.
